My Week in Meals

As you may remember, I heavily rely on meal planning to stay within my grocery budget (or close to it!) and to avoid the dreaded “What should we make for dinner?” conversation.

Every Sunday morning, I pour myself a cup of coffee, turn on an episode of Chopped, and start flipping through the ads in the paper searching for anything on sale and in season. I also check the weather for the week so I can customize my meals, for example: if it’s going to rain, I might opt to make a soup in the crock pot. If there’s going to be a super hot day, I’ll plan a yummy, fresh salad so we’re not heating up the house.

Most of our July days are sunny and in the mid-80s so we’ve been planning many meals around our grill and garden. There are several advantages to making meals on the grill: there’s less clean-up, we tend to eat healthier and fresher, and my husband makes dinner instead of me! Win, win, WIN.

This week, Angus petite sirloin steaks were on sale for $7.99 per pound and there were specials on cilantro, parsley, tomatoes, romaine, and zucchini. PERFECT! We also still have some chicken in the freezer so I dug out an old recipe I haven’t made in forever, Chicken Apple Crepes. This is one of my Mom’s recipes and I LOVED it as a kid. It’s sweet and savory and fluffy and super delicious. If I can get some nice photos of it, I’ll be sure to post the recipe. 

Since I’m trying to drop a few *cough*dozen*cough* pounds right now, I like to put healthy twists on my favorite foods so I can save calories. The first time I told my husband we were making lettuce burgers, he shot me an eye roll that would make Tina Fey proud. Luckily, he loved it! The iceberg lettuce is crunchy and provides the perfect texture for all the burger goodies inside.

-Turkey Lettuce Burgers

Thursday
-Green Smoothie with Carrot and Apple
-Fresh Green Salad
-Grilled Steak and Roasted Zucchini

Friday
-Green Smoothie with Pineapple and Papaya
-Steak Salad
-Quinoa Enchilada Bake

Saturday
-No plan! I don’t usually plan anything for Saturdays because we go out or just throw stuff together.
